Mexican Waffles

In my quest to make better use of my waffle iron,  I came up with an idea to use up some left over corn tortillas and re-fried beans that had been in the frig for a few days.  

First, I cut the corn tortillas into nice little squares.  I mixed the left over beans with some tomatoes and spread the mixture over a tortilla.  Then I  topped it with another tortilla to create a nice little pocket.

I thought for a moment about adding cheese.  After all, cheese makes everything better, but I decided to see if the kids would eat the concoction sans cheese.  I could always add cheese to the next batch.

I toasted the corn tortillas scraps in the waffle iron with a dash of salt and told the kids they were homemade chips.  Then I toasted the Mexican waffles.   The Mexican waffles were served to hungry kids for dinner with some lettuce and hot sauce.

Dance in the Rain

There's nothing great to do outside on a 92 degree day with 90 percent humidity unless you have a swimming pool.  We don't .  When you walk out the door you feel as though your chest might collapse, so the kids and I were trying to make the best of it. I was doing some organizing and  the kids were drawing at the table when we heard the sound of rain.

In a flash a flash of inspiration, I made my way to the bedroom.

"Go put on your swimsuit quickly if you want to play in the rain,"  I called out as I rushed  to change.  My 11 year old gave me a befuddled look as his two younger siblings dashed to their rooms to change.  The rain was cool and felt good to my soul.    We laughed at cars passing by and splashed each other in the puddles. Then my four year old grabbed the umbrella and started to sing loudly and slightly off-key. 
  
"Mom, that was epic," said my youngest boy as we were inside drying off.
I smiled at my 11 year old who was shaking his head.
"You guys are crazy," he said.
 "I know," I replied.

Our kids grow up in a blink of an eye. 
My best advice, dance in the rain before it's too late.

Recipes on My Waffle Iron

1.  Waffles- the key to making these great is to separate the egg whites and beat the whites until they're stiff.  Fold the whites into the batter and don't over mix.

2.  Pizza Waffles- Make a pizza sandwhich with bread, pizza sauce (tomato sauce with Italian seasoning) cheese and choice toppings and top with another slice of bread.  Voila.

3.  Tuna Melt- 2 slices of rye bread, Swiss cheese and tuna.

4.  Grilled Cheese- Bread, butter, cheese.  You can't go wrong.

5. Brown Sugar Baby Bread- Bread, butter, brown sugar.
